StoneX Director of Dairy Market Insight Nate Donnay explores why cheese has become the U.S. dairy sector’s growth engine and what the latest wave of plant construction means for supply, prices and risk management.
Only about 15% of U.S. milk now goes to beverage bottles, while roughly 50% is turned into cheese, a share that has risen “for the past five or six decades”. Fluid-milk declines, coupled with cheese’s versatility, continue to shift consumer demand toward the dairy aisle’s most adaptable product.
Donnay notes that Texas, Kansas, New York, South Dakota, Minnesota and Wisconsin are all adding or expanding facilities, part of an $8 billion build-out scheduled to finish by late 2024 and into 2025. If every new line runs at full tilt, U.S. cheese output could rise 4.5-6%, levels not seen since 2006, when prices slumped to government support floors.
Plants take about two years to build, giving existing processors time to adjust. Early data show Q1 production up only 0.5%, as established makers “have been nervous about overproduction”. Meanwhile, first-quarter record exports tightened inventories, pushing spot cheese to eight-month highs in late May and inspiring futures premia into June.
Donnay cautions that expectations often diverge from reality: “The industry thinks we know what’s going to happen… and the exact opposite ends up happening”. With capacity expanding faster than domestic demand, and exports vulnerable to global swings, disciplined hedging remains vital for processors, traders and end-users navigating the 2025 dairy landscape.

August 5 – U.S. equities markets are on fire this week, with both the Dow Jones and S&P 500 setting new all-time highs yesterday with futures indicating further gains again today; the marketplace remains optimistic over a deal with Iran despite no evidence of such as of yet. Crude oil is working on a lower high and low today but remains slightly on the high side on the session, while the dollar is retreating back towards Monday’s nearly two-month low. The ten-year note is steady-to-lower this morning (though solidly lower so far this month) at 4.605%, while the VIX index continues to rebound into mid-week at almost a 17-point reading this morning.
