Euro’s Rise Squeezes European Dairy Margins

Global Supply Dynamics

Milk is produced “almost 800 billion tonnes” a year, with about “20 % … in Europe”. Constant milking means supply rolls in daily, yet seasonality still matters. New Zealand, for example, produces up to nine times more milk in October than in June, while the UK maintains a flatter curve to meet steady domestic demand.

Because fresh milk spoils quickly, processors must act immediately—either bottling it or converting it into longer-life products. In Europe roughly half of all milk becomes cheese, a shift that compensates for falling liquid-milk consumption.

Cooperative Consolidation

Dairy remains unique among commodities for its cooperative roots. Lancaster notes that “the combination of Arla and DMK will make the largest dairy co-operative in Europe”, rivaling Fonterra’s global scale. Farmer-owned models help balance producer returns with investment in processing capacity, yet consolidation also intensifies competition in value-added niches such as specialty cheese and whey proteins.

Processing, Consumption & Trade Routes

New Zealand converts the bulk of its output into exportable powders—whole-milk and skim-milk powder—because “95-98 % of their milk is actually exported”. The long shelf life (up to two years) and lack of cold-chain requirements make powders ideal for lower-income regions. China is “by far the biggest single importer of dairy products globally”, taking an order of magnitude more than Mexico, the next-largest buyer.

While high-income consumers favour fat-rich products such as butter and cheese, many exporting regions must still clear large surpluses of protein via skim-milk powder, tying their fortunes to volatile global demand.

Currency & Price Volatility

Dairy prices trend rather than spike, but even a 2-3% supply imbalance can move markets substantially. The recent appreciation of the euro has made European powder “more expensive … in euro terms,” forcing processors to cut prices to remain competitive. Meanwhile, cheaper US cheese is winning share in Southeast Asia and Japan, setting up further pressure on EU cheese values later this year.

Although milk may look stable day to day, Lancaster warns that its price is acutely sensitive to slow-burn shifts in exchange rates, weather and trade policy—making active risk management essential for everyone from farmers to food manufacturers.
